TEQUILA SHRIMP SALAD
El Charro Cafe Restaurant Recipe

1/2 cup chile oil
2 teaspoons crushed red pepper flakes
1 teaspoon salt
1 teaspoon lemon pepper
1/4 cup dice green onion
1/4 cup chopped parsley
1/4 cup finely diced cilantro
1/4 cup lime juice
1 fresh jalapeno, finely chopped, and seeded
1/2 cup tequila
2 tablespoons triple sec
1 pound medium shrimp, cooked, cleaned, and deveined
2 avocados, diced and tossed in 1/2 cup lime juice
3 cups baby spinach
3 cups romaine lettuce
1 cup diced tomato
1 cup diced cucumber
2 limes, cut into wedges for garnish

Place the oil, pepper flakes, salt, lemon pepper, green onion, parsley, cilantro, lime juice, jalapeno, tequila and triple sec into a glass bowl. Add the shrimp, toss, cover with plastic wrap and set aside. In a separate bowl mix the avocados, spinach, Romaine lettuce, tomato, and cucumber in a large bowl and sauce with the shrimp mixture garnish with limes.
