GUACAMOLE SALAD BURRITOS
Chi Chi's Restaurant Recipe
Guacamole:
2 large ripe avocados, peeled and finely chopped
2 tablespoons fresh lemon juice, divided
1 cup Chi Chi's salsa, well drained
2 tablespoons chopped fresh cilantro
2 tablespoons Chi Chi's diced green chilies
2 tablespoons finely chopped onion
1 teaspoon minced fresh garlic
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
Burritos:
6 (10 inch) flour tortillas, warmed
guacamole
1 1/2 cups shredded lettuce
1 cup chopped tomato
3/4 cup shredded cheddar cheese
sour cream
additional salsa
In a medium mixing bowl, mash 1 avocado with 1 tablespoon of lemon juice. Stir in the rest of the guacamole ingredients.
In the center of each tortilla, place 1/2 cup of guacamole, 1/4 cup shredded lettuce, 2 tablespoons of chopped tomatoes and 2 tablespoons of shredded cheese. Fold the tortilla like a burrito. Serve with sour cream a salsa. Makes 6 servings.
