RICE PUDDING
El Charro Cafe Restaurant Recipe
1 cup rice
1/2 stick cinnamon
1/8 teaspoon salt
1 cup water
1 cup sugar
3/4 cup milk
1/4 cup seedless white or dark raisins
2 egg yolks
grated peel of 1/2 lemon or orange
1/4 cup chopped almonds, pecans or pine nuts
Combine the rice, cinnamon stick, and the salt in the water in a saucepan. Cover and bring to a boil. Reduce the heat immediately and steam until the rice absorbs the water, about 10 minutes. Discard the cinnamon stick. Add the sugar, milk, and raisins to the rice, stirring lightly, but not breaking up the rice. Cover and let stand so the milk is absorbed by the rice, about 10 minutes. Beat the egg yolks and, stirring constantly, slowly stir the yolks into the rice mixture. Return to low heat and stir in the grated fruit peel. Cook 5 minutes more, being careful not to let the mixture burn. Chill. Serve topped with nuts. Makes 4 servings.
