TORTILLA CRUSTED CHICKEN
El Charro Cafe Restaurant Recipe
Chicken:
8 (6 oz.) boneless, skinless chicken breasts
1 cup low fat milk
1 cup flour
3 cups finely crushed tortilla chips
Seasoning Mix:
1/4 cup salt
2 tablespoons pepper
2 tablespoons garlic powder
2 tablespoons cayenne pepper
1 tablespoon dried parsley flakes

Wash and pat dry the chicken pieces. Place the milk in a bowl and add the chicken pieces. Place the seasoning mix in a plastic bag. Mix the flour and tortilla chips together and place in the plastic bag with the seasoning mix. Remove one piece of chicken at a time and place in the bag. Close and shake until fully coated with the seasoning mix.
Preheat the oven to 350 degrees. Remove each piece of chicken and place on a baking sheet sprayed with butter flavored cooking oil. Place a dab of margarine on each breast for color and moisture. Bake for about 45 minutes or until a thermometer reaches on internal temperature of 160 degrees. Serve with your favorite Spanish rice recipe or cheesy potatoes.Makes 8 servings.
