VEGETARIAN BURRITOS
El Charro Cafe Restaurant Recipe
6 (12 inch) flour tortillas
1cup cooked whole or refried beans
1 cup cooked rice
1/2 cup sliced mushrooms
1/2 cup chopped onion
1 cup shredded Cheddar cheese
1 cup steamed spinach
1 cup chopped tomatoes
1 cup salsa
1 cup sour cream
Lay out 1 flour tortilla on a flat surface. Place about 2 tablespoons of each ingredients into the tortilla, layering together so that you can still roll a tortilla. Roll a tortilla and repeat using all the tortillas and all the ingredients. Makes 6 burritos.
