FIESTA TACO SALAD
Chi Chi's Restaurant Recipe
Salad:
4 tablespoons vegetable oil, divided
2 (8 inch) flour tortillas soft taco size, cut into thin strips
1 (0.78 oz.) package taco seasoning mix
1 pound ground beef
2 cups shredded lettuce
1 1/2 cups shredded Cheddar and Monterey Jack cheese blend
1 cup chopped tomato
1 cup corn kernels
1 (15.5 oz) can black beans, rinsed and drained
2 tablespoons chopped fresh cilantro
Lime Dressing:
3 tablespoons lime juice
3 tablespoons vegetable oil
1 garlic clove, minced
2 teaspoons honey
1/2 teaspoon ground cumin
In a large skillet over medium-high heat add 3 tablespoons oil. Cook the tortillas strips in hot oil for 20 to 30 seconds or until golden brown. Remove to paper towel to drain.
In large skillet over medium-high heat, add the remaining oil; add the beef. Cook about 10 minutes or until browned, stirring occasionally. Add the seasoning mix according to package directions; cool.
In large bowl combine the beef mixture, lettuce, cheese, tomato, corn, black beans, cilantro and jalapenos.
To make the lime dressing, in small bowl whisk all ingredients until combined. Pour over salad. Arrange salad on plates. Top with tortilla strips.
